My true favorite and a dish that has gained significant popularity among my friends is the seafood jellies. This starter is not only visually pleasing but also quite easy to prepare. Just unmold, garnish with a dollop of red caviar, a spoonful of horseradish, and Marie-Rose sauce, and serve. It's a simple yet impressive treat.
Chicken Marsala: A Searred Oxymoron
While not one of my most cherished creations, the Chicken Marsala was a project requirement for my culinary arts class. I seared chicken breasts to create a beautiful crust, infused the dish with aromatics and Marsala wine, and voilĂ ! The flavor was divine and the texture perfect, making it a satisfying dish to have for my culinary arts project.
Shrimp Leek and Spinach Pasta: A Light Yet Hearty Meal
A meal that's both light and hearty, packed with vegetables and protein, is the Shrimp Leek and Spinach Pasta. The dish is easy to prepare and ready in just 20 minutes. While the pasta cooks, sauté leeks and shrimp in butter. The spinach wilts naturally when combined with the warm pasta, and a touch of lemon zest enhances its freshness. Both kids and adults will enjoy this tasty and healthy meal, which offers a "macaroni and cheese"-like experience with the added benefits of two vegetables.
A Grand Culinary Endeavor: Beef Wellington
The most impressive and grandiose meal I've created was Beef Wellington from scratch. This project involved making the puff pastry, duxelles, pate, and a very fancy beef demi-glace stock that required several days to complete. The result was a truly exceptional dish, and despite it being a "stunt cooking" project, I would certainly consider recreating it again someday. Another memorable creation was a puff pastry shell containing a quail stuffed with foie gras, which was oven-baked and served with an additional sauce. While this dish was fantastic, I learned from it that I prefer my fancy ingredients to be deconstructed so I can taste each of them both on their own and together.
