Guide to Making Authentic Vietnamese Coffee

Vietnamese coffee is a rich and unique beverage that combines Robusta coffee beans with sweetened condensed milk. This unique preparation method results in a flavor profile that is both intense and smooth. Here, we will guide you through the process of making Vietnamese coffee from start to finish.

Ingredients and Preparation

Ingredients

Robusta coffee beans Sweetened condensed milk or evaporated milk (unsweetened condensed milk mixed with sugar) For Vietnamese coffee filter set Brewing vessel (a 12-ounce, 355-ml clear and heat-proof glass) Water (Optional: chicory root)

Part 1: Assembling the Filter

Step 1: Prepare the Milk

Pour the sweetened condensed milk into a clear and heat-proof glass. If you are using evaporated milk, add 1 cup (338g) of sugar to a can of evaporated milk and heat it in a saucepan, whisking until the sugar dissolves. Set it aside to cool.

Step 2: Set Up the Filter

Take apart your Vietnamese coffee filter set: separate the spanner, brewing chamber, filter insert, and lid. Place the spanner over the glass, insert the brewing chamber into the recessed spanner, and then slide the filter insert into the chamber. If you are using a filter with a screw, tighten it slightly so the coffee has room to bloom.

Part 2: Making the Coffee

Step 1: Boil the Water

Pour water into an electric kettle and bring it to a boil. Alternatively, boil the water over medium heat in a saucepan. Let it cool for 30 seconds to a minute to get it to the ideal brewing temperature of 195-205°F (91-96°C).

Step 2: Add Coffee and Bloom

Add your ground coffee to the brewing chamber, which should be medium or dark roast. If you wish to add chicory root, include 1 gram in the mix. Tap the chamber to settle the grounds and start the brewing process.

Step 3: Adjust the Drip Rate

Pour hot water to fill the chamber to about a quarter full and let it bloom for 20 seconds. Monitor the drip rate. If it's too fast or too slow, adjust the tension on the filter screw (clockwise to tighten, counterclockwise to loosen).

Step 4: Add Remaining Water

Fill the remainder of the brewing chamber with hot water, then put the lid on to retain heat during brewing. If needed, adjust the drip rate again.

Step 5: Brew the Coffee

Brew the coffee for 3 to 5 minutes. Once done, carefully remove the filter assembly by the bottom spanner and place it aside.

Part 3: Drinking Vietnamese Coffee

Step 1: Serve as Is

Maintain the separate layer of condensed milk on the bottom and drink the coffee unstirred. Enjoy the strong, bitter coffee first, followed by the sweetened condensed milk.

Step 2: Mix and Stir

Another option is to stir the brewed coffee and condensed milk to blend the flavors. You can also add more sugar to your taste.

Step 3: Enjoy Hot or Iced

Coffee is ready to drink immediately. If you prefer iced coffee, fill the glass with ice and let the coffee sit for a few minutes to chill.

Conclusion

Authentic Vietnamese coffee is more than just a beverage; it's an experience. By carefully preparing and brewing your coffee using the Vietnamese coffee filter method, you can fully appreciate its complex flavors.
