When I married Jerry 46 years ago, I was just turning 16. I was not a natural-born cook, nor was I encouraged to step into the kitchen. Growing up, my mother kept the kitchen under strict control, only allowing me to clean up after her. It was Grandma who introduced me to the joys of cooking and creativity in the kitchen. With her guidance, I learned to take simple ingredients and transform them into delightful dishes.

From Fresh Meals to Leftovers

One evening, I enjoyed a homemade open enchilada that I had prepared using leftover ingredients. The meal was comprised of flour tortillas cooked in red enchilada sauce, topped with seasoned beef, onions, chiles, and fire-roasted tomatoes. Beneath a layer of pinto beans, more onions, and diced jalapenos, a bed of lettuce completed the meal. The next morning, I repurposed the leftovers into a delicious breakfast—a breakfast casserole. Using small tortillas, I filled each well of a muffin tin with a mixture of the enchilada ingredients and seasoned duck eggs. Baked until golden and the cheese was melted, this breakfast casserole was a hit with my family.

As a passionate cook, I enjoy preparing Italian dishes and most of our meals—breakfast, lunch, and dinner.
