tPreparation - Peel and wash the potatoes, and cut them into long strips. Rinse the potato strips three or four times with clean water to remove the starch, then dry them thoroughly.
tDusting - Apply a thin layer of flour to each potato strip, ensuring a light coating.
tFrying - Heat oil to 40-50°C. Fry the potato strips for the first time until they are slightly golden, then remove to drain. Heat the oil again and fry the strips a second time until they are golden brown and crispy. Remove and ensure the excess oil is drained off.
This homemade version of French fries is much crispier than anything you can buy atchain-restaurants, like KFC. I find that this recipe can satisfy the whole family.
Healthier Roasted Potatoes
I grew up in a "meat and potatoes" household, where potatoes were a staple at every meal. My favorite way to prepare potatoes is to roast them in olive oil with a mix of garlic and aromatic herbs.
