Today's Cooking Adventures: From Oven Baked Tacos to Traditional Chicken Curry
Just came out of the oven, into the belly, and enjoyed! I munched on one cookie. Today, I experimented with some cold noodle and hot sesame paste recipes, including a delightful tahini soy sauce and chili oil mixture. It was crowned with fresh coriander and scallions, or sometimes even cucumber, which I sadly didn't have on hand. An ideal snack for that sweltering summer when you don't feel like cooking.
Air-Fried Wings and Healthy Coleslaw
For lunch, a burst of spicy and sweet honey-ginger-soy sauce air-fried chicken wings paired with homemade coleslaw. I’m always looking for delicious, lighter options to satisfy a craving without feeling guilty, and these wings fit the bill.
Hearty Veggie and Puff Pastry Tarts
A simple but satisfying Mexican-inspired black bean and corn salad with red onion, garlic, avocado, cherry tomatoes, red pepper, jalape?o, and fresh coriander all drizzled with a vinaigrette made from fresh lime juice, acacia honey, and olive oil. These tarts were a delightful pairing, reheat with leftover Japanese eggplant and scallions with cherry tomatoes for an extra crunch and flavor. Wrapped up the day with some fresh peaches in vanilla sheep's yogurt, not the best, but certainly a delicious and refreshing dessert.
House-Made Black Bean Tacos and Insights
House-made black bean tacos were prepared today. I didn’t capture images, but they were pretty much as this described – 10 tacos, each meant for two, with 3.5 portions going to me despite my wife barely eating. It didn’t seem right to give her only a half a taco, so I made sure she got a full portion. The kids might chat with neighbors, spoiling my secret, but I won't let that stop me from risking it for a delicious meal.
Mexican Chicken Noodle Casserole for the Night
Today’s dinner will be a traditional Mexican chicken noodle casserole – a comforting, warm dish perfect for a chilly evening.
Shipwreck Stew in Slow Cooker
Post-lunch, I turned the Shipwreck stew on in my slow cooker. Just turned it down to “Keep Warm” mode, and it will be ready for a delectable dinner. As an appetizer, grilled swordfish steak and a spinach salad rounded out a delightful lunch today.
Evening Chicken Thighs and Delicious Hummus
Today, chicken thighs formed the basis of my evening meal. A traditional chicken curry with garden peas but using only thigh meat. The result was a lot of shiny gravy, which is perfect. Cooking the thighs on the bone added an extra layer of flavor that isn’t found in breast meat. Both my son and wife appreciated the dish, and my wife even prepared a side of lightly spiced baby potatoes with onion, garlic, and spring onions to complement it. The combination was simply wonderful, and there will be leftovers for another meal in the next 2-3 days.
