This tiny establishment, located in a village a couple of kilometers off the tollway north of Ensenada, offers a simple yet incredibly delicious dining experience. The restaurant features a refurbished interior with six mismatched tables and an eclectic array of chairs. Lunch typically consists of three pots of simmering dishes: one with pollo, another with res, and a rotating selection of pescado, puerco, or cabrito. Each dish is served with your choice of corn or flour tortillas, rice, and the beans of the day.
The corn tortillas at Paulas are absolutely remarkable, cooked fresh on a comal and still puffy and steaming hot. The combination of meat, vegetables, and hot stews, served in tortillas and accompanied by rice and beans, creates an unforgettable dining experience. The affordability and simplicity of the meals make it a truly satisfying meal. I have tried Mexican cuisine across various price points, and while some have been excellent, none have made me as happy as the food from Paulas. The authentic flavors, fresh ingredients, and thoughtful preparation methods transform a simple meal into a culinary masterpiece.
