Seafood Linguine Recipe

Ingredients

500g (1 lb) Linguine pasta 1/2 cup butter 2 large shallots, finely diced 2-3 cloves garlic, finely minced 1 cup whipping cream (35% milk fat) 1/4 cup freshly grated Parmesan cheese 2 tablespoons chopped parsley 1 can (about 1 cup) frozen lobster pieces, thawed and broken into pieces (or use a cup or so of fresh, cooked, and cut-up lobster meat) 12-15 large scallops, with foot removed 2 cups frozen, pre-cooked shrimp, thawed Salt and pepper to taste

Instructions

Melt the butter in a large frying pan over medium heat. Add the shallots and sauté until they become clear. Add the garlic and continue cooking for about one minute. Transfer the shallot and garlic mixture to a bowl. Add more butter if necessary. Cook the scallops until they are lightly browned on both sides, approximately 2-3 minutes per side. Meanwhile, cook the pasta according to the package directions until it is al dente. Reserve about 1/4 cup of pasta water. Add the lobster, shrimp, cream, and the shallots/garlic mixture to the pan with the scallops. Heat over low to medium heat until the cream comes to a low simmer. Add the Parmesan cheese, salt, pepper, and parsley to the seafood mixture. Keep warm. Add the cooked linguine and some of the reserved pasta water to the seafood mixture. Stir well and serve immediately. TIP: Heat dinner bowls, plates, and serving bowls to maintain the warmth of the dish.

Shrimp Scampi Recipe

For a balanced and flavorful dish, I recently posted a Seafood Pasta in Tomato Wine Sauce Mixed with Zoodles on my channel, GetFitwithMindy. This pasta dish is not only delicious but also low in calories—just 377 calories per serving. It features a harmonious combination of acidity from the tomatoes, sweetness, and a slight bitterness from the fennel, wine, and mussels, creating a perfect balance of flavors.

To prepare the dish, follow these steps:

Cook linguine pasta according to package instructions until al dente. In a large pan, heat olive oil over medium heat. Add minced garlic and red pepper flakes and sauté until fragrant. Add sliced shallots and cook for a minute more. Toss in the shrimp and cook until just pink. Remove from pan and set aside. Reduce heat and add white wine, reducing by half. Add crushed tomatoes and let simmer for 10 minutes. Add the shrimp back into the pan, cook for a few more minutes, and stir in parsley. Combine the pasta with the sauce, add a bit of pasta water if needed to make it creamy, and serve immediately.

Tips for a Perfect Seafood Pasta

Use high-quality ingredients to enhance the flavors of your dish. Prep in advance or cook the seafood separately to keep it fresh and cohesive in the sauce. Ensure a good balance of acidity, sweetness, and umami to create a harmonious taste profile.

Happy cooking, and enjoy your delicious seafood pasta!
