The Quest for the Best Sushi in the World: A Personal Journey

The Quest for the Best Sushi in the World: A Personal Journey

Had lunch at Gatten Sushi yesterday, and it was excellent. But, as for the best taste in the world, I'm not sure. Living in the US for 10 years, where the sushi is mediocre at best, has left me with a certain perspective. When I returned to Japan, the COVID-19 pandemic was in full force, and I haven't had the chance to try sushi outside my own area. So, I take each sushi experience as a culinary journey in itself, encompassing more than just the rice and fish.

We Don't Eat the Restaurant, We Eat the Sushi

It's more about the overall dining experience, including sashimi, miso soup, tempura, and other traditional dishes that make up the full sushi tasting menu. No one alive has tasted every sushi bar/restaurant in the world, but the experience of Matsuri Restaurant stands out in my memory. Located at Bury St St.James's in London (now long defunct), it had an excellent sushi counter, served fantastic teppanyaki dinners, and offered a unique experience on one special evening.

A Special Evening at Matsuri Restaurant

On that special evening, we were privileged to attend a tasting menu that paired various and very varied sakes—from sparkling to Dai Ginjos—with a special menu organized by a sake importer in Willesden, Slow Food, and the chefs. This event was more than just a meal; it was a celebration of flavors, cooked with expertise and passion that left a lasting impression. This experience truly was a feast for the senses.

A Shortage of Greatness

Guest reviews often highlight that being fantastic tends to be a fleeting moment. Great chefs often move on, and life changes, making it hard to find consistency in culinary excellence. The restaurant where the least mediocrity was present often had a society dedicated to preserving its memory, ensuring that the quality remains a testament to their culinary prowess.

Mediocre as a Guarantor of Longevity

Conversely, mediocrity often guarantees longevity, which can be a mixed blessing. While consistency is appreciated, it can also mask underlying issues or lack of innovation in the culinary world. Restaurants that manage to strike a balance between maintaining quality and offering something new and exciting tend to be those that stand the test of time.

The Search Continues

My journey to find the best sushi in the world continues, with each new experience offering a fresh perspective. My time in Japan has only heightened my appreciation for true culinary excellence. Thus, my search is not just for the best sushi bar or restaurant, but for the ones that can offer a unique and unforgettable dining experience, reminiscent of the special evening at Matsuri Restaurant.

Conclusion

From Gatten Sushi to Matsuri Restaurant, my journey to find the best sushi in the world has been both fulfilling and humbling. Each experience, whether mediocre or fantastic, has added depth to my understanding of what makes great sushi. The search for the perfect sushi continues, but for now, the memories of the exceptional dishes and experiences remain etched in my heart.
