Poha, a popular Indian snack, often leaves out one ingredient that many recipes insist on including: eggs. This dish can be fully enjoyed without them, especially when you create a truly scrumptious meal with sprouts. Sprouts poha is not only a delightful taste sensation, but also a nutritious addition to your diet. Let's explore this recipe for a dish that's perfect for health enthusiasts and everyone else.
Ingredients
1.5 cup Flattened Rice (Poha) 3 tablespoons Oil 3 tablespoons Groundnuts 1 teaspoon Mustard 1 teaspoon Cumin 2 Red chilies 2 Sprigs of Curry leaves 1/4 cup Chopped Onions 2 Green chilies, finely chopped 1/4 cup Grated Carrot 1/4 cup Grated Capsicum (Bell pepper) 1/4 cup Chopped Tomato Salt - as required 1/4 teaspoon Turmeric 1/4 cup Frozen Peas 1/2 cup Sprouts 1/4 teaspoon Sugar 4 tablespoons Water Chopped Coriander - a little for garnish 1 tablespoon Lemon juiceRecipe
Begin by preparing the flattened rice (poha). Strain and clean the poha in a strainer and let it stand for a while to fully drain the water.
Heat some oil in a pan. Once hot, add the groundnuts and let them splutter. Then, add mustard seeds, cumin seeds, and red chilies. Wait for them to sizzle.
In the same pan, add chopped onions, green chilies, and curry leaves. Cook until the onions become soft and translucent.
Add the grated carrot and bell pepper pieces and cook for about 3 minutes. This helps to soften the vegetables a bit while infusing the oil with their flavors.
Now, add the frozen peas, sprouts, and chopped tomato along with some salt and turmeric. Cook for another 3-4 minutes until the vegetables are nicely cooked but still retain a slight crunch.
Next, add the flattened rice to the mixed vegetables and spices. Toss it gently over low to medium heat until the rice is evenly coated with the mixture. Be careful not to break the rice grains.
To finalize the dish, top with a small amount of sugar and water. Leave it alone for 3-4 minutes without stirring too much. This helps the rice to absorb the flavors better.
Garnish the dish with chopped coriander and a drizzle of lemon juice just before serving.
Sprouts poha is a perfect dish for those who want to include more sprouts in their daily diet without compromising on the taste. This recipe is simple yet packed with flavor, making it a great meal option for any time of the day. Enjoy!
