Preparation:

Wash the tomatoes, cucumber, and onion. Drain well. Cut the tomatoes and place them in the blender jar. Remove the membranes, stem, and seeds from the pimento. Cut into pieces and add to the blender jar with the tomatoes. Peel and chop the onion, place in the blender jar with the other vegetables. Peel the garlic and add it to the blender jar with the other vegetables. Blend all ingredients until there are no more vegetable pieces. Add salt, olive oil, and vinegar. Adjust the taste to your preference. If the gazpacho is too thick, add a little cold water. Refrigerate the gazpacho for at least an hour before serving it very cold.
