Salmon is a versatile fish that can be paired with a wide variety of vegetables to create both healthy and delicious meals. In this article, we'll explore several excellent side dishes that complement grilled salmon. We'll also provide a detailed recipe for one of my favorite salmon dishes, one that has proven itself on multiple menus and is a customer favorite.

Some Excellent Pairings for Grilled Salmon and Vegetables

There are many great vegetables that pair wonderfully with grilled salmon, enhancing the overall flavor and nutrition of the dish. Here are a few suggestions:

1. Scalloped Potatoes and Broccoli

These creamy potatoes and florets of broccoli make a comforting and flavorful side dish that complements the rich, meaty texture of grilled salmon. The combination of mild potato and slightly earthy broccoli offers a perfect contrast to the freshness of the fish.

A Favorite Salmon Recipe: A Flavorful and Fabulous Dish

While there are many great side dishes, I have a favorite salmon dish that has seen success on multiple menus and is still a customer favorite. This dish is not only delicious but also packed with flavor. Here's the recipe:

Ingredients:

Wild salmon fillet Basmati fried rice with egg, chopped snow peas, green onion, orange bell pepper, and micro diced carrot Caramelized onion Yukon gold mashers Grilled asparagus Squaw bread warmed with butter and honey Marinade (teriyaki and soy sauce, honey, pineapple juice, tangerine zest, crushed red pepper, garlic, chive, black pepper, paprika, EV olive oil, peanut oil) Melted butter with chopped garlic Butter and honey for squaw bread

Preparation:

Preheat grill or heat charcoal to high temperature. Prepare a marinade by mixing 50/50 teriyaki and soy sauce, adding honey, pineapple juice, tangerine zest, crushed red pepper, garlic, chive, black pepper, paprika, EV olive oil, and peanut oil. Make basmati fried rice with egg, chopped snow peas, green onion, orange bell pepper, and micro diced carrot. Caramelize onions and prepare Yukon gold mashers. Grill asparagus with a top rubber band until al dente. Wrapping squaw bread in foil and baking in a 200-degree oven. Brush the asparagus and salmon with butter and chopped garlic. Coat the salmon with the marinade and let it sit for at least 15 minutes. Prepare your grill grates by cleaning with a wire brush and applying peanut oil. Remove salmon from the marinade, dipping it in a mix of EV olive oil and peanut oil to prevent overflow. Cook the salmon on the grill, keeping an eye on it to ensure it is cooked to perfection. Cook the asparagus similarly after brushing it with butter and garlic. Plate the salmon with the basmati fried rice, caramelized onion Yukon gold mashers, grilled asparagus, and warmed squaw bread with honey butter. Serve with a nice glass of Merlot to complement the flavors.
