How to Make Perfect Pani Puri at Home

Ingredients

Puri

1 cup semolina rava (buckwheat flour) 1/2 cup all-purpose flour (maida) 1/2 teaspoon salt A pinch of baking soda Oil for deep frying

2 medium potatoes, boiled and mashed 1/2 teaspoon salt 1/2 teaspoon chaat masala powder 1/4 teaspoon black pepper powder 1/4 teaspoon red chili powder 1/4 teaspoon garam masala powder

Pani

1 cup mint leaves 1 cup cilantro leaves 2-3 green chilies, chopped 1/2 teaspoon ginger (grated) 1 lemon, juiced 1 teaspoon salt 1 teaspoon sugar 1/2 teaspoon black salt 1/2 teaspoon chaat masala powder

Tamarind Chutney

1/2 cup tamarind pulp 1/4 cup jaggery 1/4 cup water 1 teaspoon salt 1 teaspoon red chili powder 1 teaspoon chaat masala powder

Instructions

To Make the Puri

Combine the semolina, all-purpose flour, salt, and baking soda in a bowl. Gradually add water and knead into a soft dough. Cover the dough and let it rest for 30 minutes. Divide the dough into small balls. Roll out each ball into a thin circle about 2 inches in diameter. Heat oil in a deep pan over medium heat. Fry the puris in batches until golden brown and crispy. Drain the puris on a paper towel-lined plate.

To Make the Potato Filling

Combine the mashed potatoes, salt, chaat masala powder, black pepper powder, red chili powder, and garam masala powder in a bowl. Mix well.

To Make the Pani

Combine the mint leaves, cilantro leaves, green chilies, ginger, lemon juice, salt, sugar, black salt, and chaat masala powder in a blender. Blend until smooth.

To Make the Tamarind Chutney

Combine the tamarind pulp, jaggery, water, salt, red chili powder, and chaat masala powder in a pan. Bring to a boil. Reduce heat and simmer for 5 minutes.

To Assemble the Pani Puri

Take a puri and make a small hole in the center. Stuff it with the potato filling, tamarind chutney, and a few sev (fried gram flour noodles). Top with the pani and enjoy!

Tips

To make the puris even more crispy, you can deep fry them twice. You can add other ingredients to the potato filling, such as onions, tomatoes, or chickpeas. If you don't have tamarind pulp, you can use tamarind paste or concentrate. You can adjust the amount of spices in the pani to your liking.
