How to Make Oil-Free Puffed Rice

Ingredients

1 cup of raw rice (preferably short-grain or medium-grain rice such as sushi rice or arborio)

Air Popping Method

Rinse the Rice:

Rinse 1 cup of raw rice under cold water to remove excess starch. Drain well.

Dry the Rice:

Spread the rinsed rice on a clean kitchen towel or a baking sheet and let it dry completely. This can take a few hours or overnight.

Heat the Pot:

Preheat a heavy-bottomed pot on medium-high heat. Ensure it’s hot enough that water droplets will sizzle when dropped into the pot.

Pop the Rice:

Add a small amount of dried rice (about 1/4 cup) to the pot. Cover it with the lid, leaving a small gap for steam to escape. The rice should start popping after a minute or so.

Shake the Pot:

Gently shake the pot occasionally to ensure even popping and prevent burning. Once the popping slows down (about 2-3 minutes), remove it from heat.

Cool and Store:

Transfer the popped rice to a bowl to cool. Repeat the process with the remaining rice.

Microwave Popping Method

Rinse and Dry:

Rinse and dry the rice as described above.

Microwave:

Place a few tablespoons of dried rice in a microwave-safe bowl and cover it with a microwave-safe lid, leaving a small gap for steam to escape. Microwave on high for about 1-2 minutes, watching closely to prevent burning.

Cool:

Once the popping slows, take it out and let it cool.
