Allow them to cool, then grind them coarsely using a mortar and pestle or spice grinder. Set aside for later use. Cooking Vegetables: Heat oil in a kadhai (wok) or a deep pan. Add finely chopped onions and sauté until they turn golden brown. Add ginger-garlic paste and slit green chilies, then sauté for another minute. Adding Spices and Tomato Puree: Add turmeric powder, red chili powder, and the prepared Kadhai Masala. Sauté for a minute to let the spices release their flavors. Add pureed tomatoes and cook until the oil separates from the masala. Cooking Paneer and Bell Peppers: Add chopped bell pepper and sauté for 2-3 minutes until they are slightly tender. Add paneer cubes, salt to taste, and mix gently to coat the paneer with the masala. Final Touches: Add garam masala powder and kasuri methi. Mix well.
