For faster cooking, you can use a pressure cooker. Mashing the Greens: Once cooked, mash the greens well using a wooden spoon or a masher. The consistency should be coarse. Preparing Tadka (Tempering): Heat ghee or butter in a pan. Add chopped onions and sauté until golden brown. Stir in chopped green chilies, grated ginger, and minced garlic. Sauté for a couple of minutes. Adding Tomatoes: Add chopped tomatoes and cook until they become soft, and the oil separates. Adding Mashed Greens: Add the mashed greens to the tadka and mix well. Adding Spices: Add salt and red chili powder to taste. Stir well. Adding Maize Flour: Sprinkle maize flour over the greens and mix to combine. This helps in thickening the saag. Simmering: Let the saag simmer on low heat for about 20-30 minutes, stirring occasionally. The longer it simmers, the better the flavors meld. Final Tempering: Heat a little ghee in a small pan. Add a pinch of red chili powder. Pour this tempering over the cooked sarson da saag before serving. Serving: Traditionally, sarson da saag is served with makki di roti (cornbread) and a dollop of butter.
