Polish Bigos: A Time-Honored Tradition

Moving across the Atlantic, we explore the hearty and aromatic Polish Bigos. This traditional dish is a combination of slow-cooked sauerkraut, Polish sausage, meat (often pork, beef, or mutton), and an array of vegetables. Bigos is not just a meal but a culinary experience that brings together families and friends over a common heritage.

Ingredients:

300 grams pork, cut into bite-sized pieces 250 grams beef, cut into bite-sized pieces 150 grams Polish sausages, cut into thin slices 500 grams sauerkraut, rinsed and drained 2 onions, diced 3 cloves garlic, minced 1 red bell pepper, diced 1 carrot, diced 1 celery stalk, diced 1 bay leaf 1 cup tomato puree 2 tablespoons sugar Kosher salt and black pepper to taste Vegetable oil for frying

Instructions:

In a large pot, heat some vegetable oil over medium heat. Add the pork and beef, cook until browned on all sides. Remove the meat and set it aside. In the same pot, add the Polish sausages and sauté until golden brown. Return the meat to the pot and add the onion, garlic, red bell pepper, carrot, and celery. Cook for about 10 minutes or until the vegetables are soft. Add the sauerkraut, bay leaf, tomato puree, sugar, salt, and pepper. Lower the heat to a simmer and let the Bigos cook for about 2-3 hours, stirring occasionally. The longer it simmers, the better the flavors meld together. Remove the bay leaf before serving.
