Heat a kadai (wok) well until the flame is intense. Dry roast the peanuts until they turn golden and crackle. Once roasted, switch off the flame and let them cool down. Then, take a handful of peanuts and rub them between your palms to remove the skin. Do this in batches and set aside. Heat 1 tsp of oil in a kadai. Sauté the green chillies until they become soft and fragrant. Add cumin seeds, coconut (if using), green chillies, peanuts, garlic cloves, and salt to a mixie (blender) jar. Grind it to a smooth paste. If you want to store the chutney for 2-3 days, add a little milk. Temper the paste by heating 1 tsp of oil in a separate kadai, and adding mustard seeds, urad dal, red chilies, and curry leaves. Cook for a few seconds until the mustard seeds splutter. Stir in the tempered paste into the chutney. Adjust the consistency by adding water as needed. Serve the chutney with idlies, dosas, or any other snack of your choice.
