In a grinder, blend the following masala ingredients: 1 teaspoon Poppy seeds 1 teaspoon Mustard seeds Few pieces of ginger 2/3 green chillies Add these masala ingredients to a kadai and heat some ghee to fry the panchporon (5 spices), tej patta (bay leaves), and dry red chilli. Once the fried masala is done, add 2 finely cut tomatoes and sauté until they are soft. Blend the pastes, add 1 small cup of milk, and cook until it thickens, adding turmeric powder for color and salt to taste. Add the sliced vegetables to the masala mixture and stir well to ensure the flavors meld. Let the mixture simmer for a few minutes, then add jeera powder to enhance the flavor. Finally, add ghee and cover the kadai for 5 minutes. Cook it on a low flame and turn off the gas.
