I tend to spend more time and effort on making the best possible wrapping for baked brie, rather than adding a topping. Puff pastry is my favorite as it adds a delicate, flaky texture. If the pastry is good, all you have to add is your favorite jam or preserves to make a great baked brie.
2. Pine Nuts and Fresh Pepper
Other people tend to use pine nuts in the center rather than berries. We do the same, but we add pine nuts or walnuts and freshly ground black pepper. Sometimes I also add some nice herbs like finely minced rosemary or thyme. Split the brie, stuff it, and wrap it in pastry. If you roll the puff pastry to the right size, you can wrap it in a single sheet, bring the edges together on top, and twist them into a decorative ruffle. Alternatively, you can use two sheets of pastry and seal the edges with an egg wash. Use the rest of the egg wash to brush on top, make some designs in it with a fork, and sprinkle with a pinch of finishing salt before baking.
