Rinse and soak the dried beans in boiling water. Place them in the refrigerator overnight. In a pot, sauté diced onions and carrots in olive oil until they take on a little color. Add the greens and cook them until they are tender. If you're using more tender greens, add them at the end of the cooking process. Add the soaked and drained beans to the pot along with six cups of vegetable stock and let it simmer for 30 minutes. Simmer the mixture for another 30 minutes, add the aromatics and seasoning, then cook until the greens and beans are tender. Depending on your preference and dietary restrictions, you can add a smoked turkey leg, ham hock, or other flavor meat to enhance the flavor, or omit it if you're maintaining a dairy and gluten-free diet. For a homemade touch, you can add a pinch of black pepper and some fresh herbs like thyme or rosemary. Cumin can also be added to enhance the flavor.Other Dairy and Gluten Free Meals
