Every chef has their fair share of recipes that never quite seem to work out as expected. Whether it's due to the complexity of the dish or the precision required, there are times when even the most tried-and-true recipes can fall short. Let's start with the quintessential Southern classic—Colonel Sanders' chicken recipe. I've attempted this time and time again, from recipes dating back to the 1990s until today. Despite countless tries and experiments, no variation has come close to the authentic taste.
From using old clips from the Phil Donahue show to the latest internet recipes, I've sought perfection. Even when Claudia Sanders' nephew shared his aunt's secrets from the cookbook, the results were still far from the original. The two dry powder mixes supplied by the Colonel himself—Marion Kay X-99 and Graces Strong Blend—came close but still fell short.
The Decline of Meringue Peach Custard Pies
While my mother's kitchen was a sanctuary of culinary excellence, I struggled with replicating her seemingly simple dishes. The meringue peach custard pie is a notable example. When I attempted to make it, the results were decent, but nowhere near the level my mother could achieve.
